Persian dried lemon, also known as limoo amani in Persian, is actually a dried lime. The misnomer "black lemon" or "dried lemon" comes from a translation from Arabic. These small limes are boiled in saltwater before being sun-dried until they become rock-hard, shrunken, and brittle.
